fry vegetable wrap

Directions:
Combine the first six ingredients in a bowl. In another
bowl combine cornstarch and water. Heat pan over high
heat. Heat peanut oil. Stir fry mushrooms until soft.
Add spinach,
zucchini and peppers, stir fry for 4 minutes. Add scallions,
season with salt and pepper and mix. Stir in the first
six ingredients. Make a hole in the center and add cornstarch.
Stir quickly as it thickens. Add peanuts and rice and
stir. Serve in a tortilla.

• 1 tbsp. dry mustard
• 2 tsp. sesame oil
• 2 large garlic cloves, minced
• 2 tsp. soy sauce
• 2 tbsp. sugar
• 2 tsp. cornstarch
• 2 tbsp. water
• 1 tbsp. peanut oil
• 1 lb quartered mushroom
• 1 lb fresh spinach
• 1 finely chopped zucchini
• 3 scallions cut into 2 inch pieces
• 1/2 each of red, yellow, orange peppers
sliced
• 1/4 cup roasted peanuts chopped
• 1 1/2 cups cooked white or brown rice
• 10 flour tortillas |
